Elegant Roasted Chicken Breasts with Herb Leaves

Cook wild rice in water for 45 to 60 minutes.  Lift skin of each breast and place 2 each of oregano, basil, sage leaves and slices of ginger under the skin.  Combine the sauce ingredients and heat.  Bake chicken at 375 degrees, basting with sauce as often as needed until done, aprox 20 min.  Toss the wild rice with butter and serve with the chicken.   • 6 boneless breasts in halves, skin on
  • 1 ½ cups wild rice
  • 12 oregano leaves
  • 3 cloves garlic sliced in quarters
  • 12 small basil leaves
  • 12 sage leaves
  • 12 thin slices fresh ginger, dime-size
  • Sauce
  • 1 tsp fresh chopped oregano
  • 1 tsp fresh chopped basil
  • 1 tsp fresh chopped sage
  • ½ tsp minced fresh ginger
  • 1 clove minced garlic
  • 1 TBS soy sauce
  • 1 TBS melted butter
  • 1 tsp Dijon-style mustard
  • 1 ½ TBS butter
